You can take a break from grilling this summer but still bring the heat with this easy to make curry recipe! The dish comes together in minutes and gives you a nice sweet heat to enjoy with a glass of chilled white wine (or cold beer!). Most Asian markets will carry the needed ingredients, including the prawns.
Ingredients:
- 250 g cooked and peeled prawns
- 1 can coconut milk
- 1 green pepper
- 1 tbsp green curry paste
- 1/2 can bamboo shoots
- 1 tbsp peanut butter
- 1 onion
- fresh ginger
- Basmati rice
- salt and pepper
- olive oil
To prepare:
- Chop up the onion and green pepper
- Pour 1/2 – 1 inch of oil in a pot
- Shallow fry the onion and green pepper
- Chop up some ginger and add it to the pot (amount depends on how much flavor you would like)
- Add the prawns and bamboo shoots
- Add the curry paste, peanut butter and coconut milk
- Simmer for 5-7 minutes
- Season to taste with salt and pepper
- Serve with Basmati Rice
