Quick Prawn and Bamboo Curry Recipe

You can take a break from grilling this summer but still bring the heat with this easy to make curry recipe!  The dish comes together in minutes and gives you a nice sweet heat to enjoy with a glass of chilled white wine (or cold beer!).  Most Asian markets will carry the needed ingredients, including the prawns. 

Ingredients:

  • 250 g cooked and peeled prawns
  • 1 can coconut milk
  • 1 green pepper
  • 1 tbsp green curry paste
  • 1/2 can bamboo shoots
  • 1 tbsp peanut butter
  • 1 onion
  • fresh ginger
  • Basmati rice
  • salt and pepper
  • olive oil

To prepare:

  1. Chop up the onion and green pepper
  2. Pour 1/2 – 1 inch of oil in a pot
  3. Shallow fry the onion and green pepper
  4. Chop up some ginger and add it to the pot (amount depends on how much flavor you would like)
  5. Add the prawns and bamboo shoots
  6. Add the curry paste, peanut butter and coconut milk
  7. Simmer for 5-7 minutes
  8. Season to taste with salt and pepper
  9. Serve with Basmati Rice
