Now that school is back in session, after school snacks are back in the pantry! Take a break from cookies and carrot sticks and introduce your child to some more exotic eats. Bamboo Shoot Dumplings (Soon Keuh) are filling yet small enough to not ruin dinner. And they’re fun to make as a family or as a group activity for any afterschool visitors!
Ingredients:
- 1 lb. pork, fresh ground
- ½ egg, large, beaten
- 1 tbsp. ginger
- ¼ c. ginger, chopped fine
- ¼ c. bamboo shoots, chopped
- ¼ tsp. chopped garlic
- 1 tsp. cilantro
- ½ c. scallions, sliced thin
- 1 tsp. sesame oil
- 2 tbsp. black Chinese mushrooms, chopped
- 1 tsp. salt
- ¼ tsp. white pepper, ground
- 2 tbsp. soy sauce
- 2 tbsp. chicken stock
- 3 tbsp. cornstarch
To prepare your Bamboo Shoot Dumplings:
- Combine all the ingredients in a large bowl. Make sure that all the ingredients are evenly distributed.
- Store in a covered bowl in the refrigerator until ready to use.
- You can opt to make your own dumpling dough or use pre-made wonton wrappers.
- Place 2-3 tsp. of filling in each wrapper.
- Seal the wrappers , pan steam and pan crisp with a bit of oil.
- Serve with a soy-based dipping sauce.
For a simple dipping sauce:
- 2 tbsp. soy sauce
- 1 tbsp. cider vinegar
- 1 tbsp. sugar
- 1 dash white pepper
Combine all ingredients and stir to dissolve the sugar.
