Stir-fried Bacon With Bamboo Shoots Recipe

Whether it’s a Sunday brunch or a decadent weekday breakfast, bamboo shoots add a crunchy treat to any menu.

Here’s what you need to make your bamboo breakfast:

  • 2 red chiles
  • 4 oz. fresh bamboo shoots
  • 3 tbsp. groundnut oil or lard for frying
  • 6 oz. smoked bacon
  • 1 tsp. garlic, finely chopped
  • 1 tsp. fresh ginger, thinly sliced
  • 1 tsp. red chili flakes, dried
  • 1 tbsp. light soy sauce
  • 1 handful chives (preferably Chinese or spring onion greens)
  • 1 tsp. sesame oil

Here’s how to make your bamboo breakfast:

  1. Remove the husk from the bamboo shoot and cut into thin slices to match the bacon.
  2. Blanch the slices in a pan of boiling water for 2-3 minutes and drain. (If using tinned water bamboo, cut into thin slices and blanch in boiling water for 2-3 minutes before draining.)
  3. Cut the chiles at an angle into thin slices.  Discard the seeds and stalks.
  4. Add the groundnut oil (or lard) to a wok.
  5. Add the bamboo slices and allow to sizzle.
  6. Add the bacon, garlic, ginger chili flakes and fresh chili.
  7. Stir-fry until fragrant, seasoning with light soy sauce to taste.
  8. Add the Chinese chives and stir-fry briefly until cooked.
  9. Remove from heat, stir in sesame oil and serve immediately with steamed rice.
