Whether it’s a Sunday brunch or a decadent weekday breakfast, bamboo shoots add a crunchy treat to any menu.
Here’s what you need to make your bamboo breakfast:
- 2 red chiles
- 4 oz. fresh bamboo shoots
- 3 tbsp. groundnut oil or lard for frying
- 6 oz. smoked bacon
- 1 tsp. garlic, finely chopped
- 1 tsp. fresh ginger, thinly sliced
- 1 tsp. red chili flakes, dried
- 1 tbsp. light soy sauce
- 1 handful chives (preferably Chinese or spring onion greens)
- 1 tsp. sesame oil
Here’s how to make your bamboo breakfast:
- Remove the husk from the bamboo shoot and cut into thin slices to match the bacon.
- Blanch the slices in a pan of boiling water for 2-3 minutes and drain. (If using tinned water bamboo, cut into thin slices and blanch in boiling water for 2-3 minutes before draining.)
- Cut the chiles at an angle into thin slices. Discard the seeds and stalks.
- Add the groundnut oil (or lard) to a wok.
- Add the bamboo slices and allow to sizzle.
- Add the bacon, garlic, ginger chili flakes and fresh chili.
- Stir-fry until fragrant, seasoning with light soy sauce to taste.
- Add the Chinese chives and stir-fry briefly until cooked.
- Remove from heat, stir in sesame oil and serve immediately with steamed rice.
